This quick and healthy sheet-pan meal combines garlic-infused shrimp with roasted vegetables for an easy weeknight dinner. Ready in 30 minutes with minimal cleanup and maximum flavor.

Instructions
1. preheat oven to 400°F (200°C) and line a sheet pan with parchment paper
2. toss broccoli, bell peppers, and zucchini with 2 tablespoons olive oil, smoked paprika, salt, and pepper
3. spread vegetables in a single layer and roast for 10 minutes
4. while vegetables roast, toss shrimp with remaining olive oil, garlic, lemon juice, dried parsley, salt, and pepper
5. remove pan from oven and add shrimp on top of vegetables
6. return to oven and bake for 8-10 minutes until shrimp are opaque and vegetables are crisp-tender
7. toss shrimp and vegetables together and sprinkle with lemon zest
8. garnish with fresh parsley and parmesan if desired
9. serve immediately
