1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
2. In a bowl, whisk lemon juice, lemon zest, olive oil, parsley, oregano, honey, salt, and pepper.
3. Coat chicken breasts in the herb marinade and let rest for 15–30 minutes.
4. Toss potatoes with olive oil, garlic, salt, and pepper and spread on one side of the sheet pan.
5. Roast potatoes for 15 minutes, then add broccoli to the pan, drizzle with oil, and season lightly.
6. Nestle chicken breasts between the vegetables and pour any remaining marinade over them.
7. Roast for 20–25 minutes until chicken reaches 165°F (74°C) and vegetables are tender.
8. For extra browning, broil for 2–3 minutes, watching closely to prevent burning.
9. Let chicken rest for 5 minutes, then garnish with fresh parsley and serve.
