Ingredients

  • 46 bone-in skin-on chicken thighs
  • 1 1/2 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary or thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)

  • Instructions

    1. preheat oven to 400°F (200°C) and line a sheet pan with parchment paper

    2. in a bowl whisk olive oil, lemon juice, lemon zest, garlic, herbs, salt, pepper, and paprika

    3. toss chicken thighs in the marinade and let sit for 10–15 minutes

    4. drizzle potatoes with oil, salt, and pepper and spread on the sheet pan

    5. place chicken thighs skin-side up among the potatoes in a single layer

    6. roast for 35–40 minutes until chicken reaches 165°F (74°C) and potatoes are golden

    7. if needed, broil for 2–3 minutes to crisp potatoes

    8. let rest for a few minutes, then squeeze additional lemon over before serving
