Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 2 carrots, thinly sliced
  • 1 cup sugar snap peas
  • 1/2 cup teriyaki sauce
  • 12 tbsp olive oil
  • salt to taste
  • pepper to taste
  • sesame seeds for garnish
  • sliced green onions for garnish

  • Instructions

    1. marinate chicken with half the teriyaki sauce for 20 minutes

    2. preheat oven to 400°F

    3. toss vegetables with olive oil salt and pepper

    4. arrange chicken and vegetables on a parchment lined sheet pan

    5. bake for 20 minutes, flipping chicken halfway through

    6. brush remaining teriyaki sauce on chicken and bake 5 more minutes

    7. garnish with sesame seeds and green onions before serving
