1. Pat the pork chops dry with paper towels and season both sides with salt, pepper, and paprika.
2. Heat a cast iron or stainless steel skillet over medium-high heat and add the oil, swirling to coat.
3. When the oil shimmers, add pork chops without overcrowding the pan and sear for 3–5 minutes on the first side.
4. Flip the chops and sear the second side for 3–5 minutes more, or until an instant-read thermometer registers 145°F (63°C).
5. Remove chops to a plate and lower heat to medium. Add butter to the skillet and swirl until melted.
6. Stir in minced garlic and cook for 30–60 seconds until fragrant, avoiding browning.
7. Return pork chops to the skillet and baste with garlic butter for 1–2 minutes, spooning sauce over each chop.
8. Optionally add thyme or rosemary sprigs and continue basting briefly.
9. Transfer chops to a serving platter and let rest for 3–5 minutes before serving.
10. Spoon any remaining garlic butter from the skillet over the chops and enjoy.
