1. spray the inside of the slow cooker with nonstick spray or butter
2. add chicken, onion, carrots, celery, garlic, thyme, bay leaf, butter, broth, and cream of chicken soup
3. season with salt and pepper and stir gently to combine
4. cover and cook on low for 5–6 hours or on high for 3–4 hours until chicken is tender
5. about 1 hour before serving, discard bay leaf and cut each biscuit into quarters
6. gently place the biscuit pieces on top of the mixture without stirring
7. cover and cook on high for another hour until dumplings are cooked through
8. remove the lid and let sit for 5 minutes to thicken
9. sprinkle with parsley and adjust seasoning before serving
