  • 22.5 lbs boneless skinless chicken breasts or thighs
  • 2 cans (10.5 oz each) cream of chicken soup
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 can (8–10 biscuits) refrigerated biscuit dough
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • salt and pepper to taste

  • Instructions

    1. Place diced onion, sliced carrots, chopped celery, and minced garlic in the slow cooker.

    2. Layer chicken on top of vegetables and season with salt, pepper, thyme, and parsley.

    3. Pour in cream of chicken soup and chicken broth, then stir gently to combine.

    4. Cover and cook on low for 6–7 hours or on high for 3–4 hours.

    5. Remove chicken and shred with forks, then return to the slow cooker and stir into the broth.

    6. Cut biscuit dough into 1-inch pieces and drop onto the surface without stirring too much.

    7. Cover and cook on high for 1 hour, leaving the lid slightly ajar for the last 15 minutes if desired.

    8. Stir in fresh parsley, adjust seasoning, and serve hot.
