Ingredients
- 2 pounds baby carrots
- 1/3 cup maple syrup
- 1/4 cup brown sugar
- 3 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon (optional)
- fresh parsley for garnish
Instructions
1. Rinse and drain the baby carrots and add them to the slow cooker.
2. In a bowl melt the butter and stir in maple syrup, brown sugar, salt, and cinnamon until smooth.
3. Pour the glaze over the carrots and toss gently to coat.
4. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until carrots are fork tender.
5. Stir halfway through cooking to ensure even coating.
6. If glaze is too thin, cook uncovered on high for 10 to 15 minutes to thicken.
7. Taste and adjust seasoning, then transfer to a serving dish and garnish with fresh parsley.
