1. Season chicken breasts with salt and pepper and heat olive oil and butter in a heavy-bottomed skillet over medium heat
2. Sear chicken on both sides until golden brown and cooked through then remove and set aside
3. Add onion and garlic to the pan and sauté until fragrant
4. Add mushrooms and cook until soft and lightly browned
5. Stir in arborio rice and cook for 1 minute to toast
6. Add warm chicken broth one ladle at a time, stirring constantly until each addition is absorbed
7. Once rice is tender and creamy, stir in light cream and parmesan cheese
8. Slice the cooked chicken and nestle into the risotto, stirring gently to coat
9. Sprinkle parsley over the top and adjust seasoning before serving
