3. In another bowl whisk melted butter, granulated sugar, brown sugar, eggs, vanilla, and yogurt until smooth.
4. Fold wet ingredients into dry ingredients until just combined.
5. Toss diced apples with lemon juice and gently fold into the batter.
6. Spoon batter into muffin cups, filling each about three quarters full.
7. Bake for 18–22 minutes or until a toothpick comes out clean.
8. Let muffins cool in the pan for 5 minutes, then transfer to a rack to cool completely.
