  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups fresh spinach chopped
  • 1 cup artichoke hearts chopped
  • 4 ounces cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves minced
  • 1 teaspoon lemon juice
  • 2 tablespoons mayonnaise or sour cream
  • 1/4 teaspoon red pepper flakes optional

  • Instructions

    1. Preheat oven to 375°F and grease a baking dish.

    2. Season chicken breasts with salt, pepper and olive oil.

    3. In a bowl combine cream cheese, spinach, artichoke hearts, mozzarella, Parmesan, garlic and lemon juice.

    4. Arrange chicken in the baking dish and spread the spinach artichoke mixture over each breast.

    5. Bake uncovered for 25 to 30 minutes until chicken reaches 165°F and topping is golden.

    6. Let rest for 5 minutes before serving.

    7. Optional: Broil for 2 to 3 minutes for extra browning.
