1. Preheat oven to 375°F (190°C).
2. In a skillet heat olive oil over medium heat and sauté garlic until fragrant.
3. Add spinach and cook until wilted, then remove from heat.
4. Stir in cream cheese, parmesan, cranberries, thyme, salt, and pepper until well combined.
5. Butterfly each chicken breast by slicing horizontally without cutting through.
6. Season chicken with salt and pepper and spoon filling onto one side of each breast.
7. Fold chicken over filling and secure edges with toothpicks.
8. Heat skillet over medium high heat and sear chicken breasts for 3 minutes per side.
9. Transfer skillet to oven and roast for 20–25 minutes until internal temperature reaches 165°F (74°C).
10. Let chicken rest for 5 minutes, remove toothpicks, then slice and serve.
