1. Trim any excess fat and pat the chicken tenderloins dry.
2. Set the Instant Pot to sauté mode and heat the olive oil for about 1 minute.
3. Sear the chicken tenderloins for 1–2 minutes per side until lightly golden, then remove and set aside.
4. Pour in chicken broth and scrape up browned bits to deglaze the pot.
5. Return the chicken to the pot, sprinkle on garlic powder, paprika, onion powder, salt, pepper and italian seasoning.
6. Close the lid, set the valve to sealing, and pressure cook on high for 3 minutes.
7. Allow a natural pressure release for 5 minutes, then quick release any remaining pressure.
8. Optional: switch to sauté mode, add butter or ghee, simmer the cooking liquid until slightly thickened and drizzle over the chicken.
