  • 1 cup apple cider
  • 2 tbsp dijon mustard
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1/2 tsp thyme
  • salt to taste
  • pepper to taste
  • fresh apple slices for garnish
  • rosemary sprigs for garnish

  • Instructions

    1. Whisk together apple cider, mustard, brown sugar, olive oil, garlic, cinnamon, thyme, salt, and pepper in a bowl.

    2. Add chicken thighs to the glaze and turn to coat evenly.

    3. Cover and refrigerate to marinate for at least 30 minutes.

    4. Preheat the oven to 400°F (200°C) and grease a baking dish with olive oil.

    5. Arrange marinated chicken skin-side up in the dish, leaving space between pieces.

    6. Bake uncovered for 35–45 minutes, basting with extra glaze halfway through.

    7. Use a meat thermometer to confirm an internal temperature of 165°F (74°C).

    8. Let the chicken rest for 5–10 minutes after baking.
