  • 2 boneless skinless chicken breasts (about 1 lb)
  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • 2 cups cooked jasmine rice
  • 1 red bell pepper, thinly sliced
  • 1 carrot, shredded
  • 1 cup snap peas
  • 2 green onions, chopped
  • 2 tbsp chopped cilantro
  • 1 cup coconut milk
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tsp honey
  • pinch of salt
  • pinch of red pepper flakes

  • Instructions

    1. Cook rice according to package instructions and set aside.

    2. In a bowl whisk sweet chili sauce, soy sauce, garlic, and ginger, then add chicken pieces and marinate for 10 minutes.

    3. Heat oil in a skillet over medium-high heat and cook chicken for 6–8 minutes until golden and glazed.

    4. In a small saucepan over low heat whisk coconut milk, lime juice, lime zest, honey, and salt; warm until slightly thickened.

    5. Remove chicken and stir-fry bell pepper, carrot, and snap peas in the same skillet for 3–4 minutes until crisp-tender.

    6. Return chicken to the pan and toss with vegetables to combine.

    7. Divide rice into bowls, top with chicken and vegetables, drizzle with coconut lime sauce, and garnish with green onions and cilantro.
