1. Cook rice according to package instructions and set aside.
2. In a bowl whisk sweet chili sauce, soy sauce, garlic, and ginger, then add chicken pieces and marinate for 10 minutes.
3. Heat oil in a skillet over medium-high heat and cook chicken for 6–8 minutes until golden and glazed.
4. In a small saucepan over low heat whisk coconut milk, lime juice, lime zest, honey, and salt; warm until slightly thickened.
