Sweet Chili Chicken with Ramen Noodles

Description

Fast, sticky-sweet, a little spicy—this sweet chili chicken ramen is a 30-minute, better-than-takeout weeknight dinner. Tender chicken, colorful veggies, springy noodles, and a glossy sweet-chili–garlic sauce with lime.

1/3 cup Thai sweet chili sauce

2 tbsp low-sodium soy sauce (or tamari)

1 tbsp rice vinegar

1 tbsp fresh lime juice + zest 1/2 lime

1 tsp grated fresh ginger

2 cloves garlic, minced

1 tsp sriracha or chili paste (optional)

2 tsp cornstarch + 2 tsp water (slurry)

CHICKEN & NOODLES

1 lb (450g) boneless skinless chicken breast or thighs, thinly sliced

1 tbsp cornstarch

1/2 tsp fine salt + 1/4 tsp black pepper

12 tbsp avocado or olive oil

2 bricks ramen noodles (about 6 oz/170g total), seasoning packets discarded

1 red bell pepper, thin strips

2 cups small broccoli florets

3 green onions, sliced (divided)

1 tsp toasted sesame oil (finish)

Sesame seeds + extra lime wedges (serving)


Instructions

1. In a small bowl whisk sweet chili sauce, soy, rice vinegar, lime, ginger, garlic, and sriracha if using. Stir in the cornstarch slurry; set aside.

2. Pat chicken dry; toss with 1 tbsp cornstarch, salt, and pepper.

3. Heat 1 tbsp oil in a large skillet over medium-high. Sear chicken 3–5 min until browned and just cooked through; transfer to a plate.

4. Add another drizzle of oil if needed; sauté bell pepper and broccoli 3–4 min until crisp-tender.

5. Meanwhile, boil ramen according to package minus 1 minute (springy). Reserve 1/4 cup cooking water; drain.

6. Return chicken to the skillet; pour in sauce. Simmer 1–2 min, stirring, until thick and glossy.

7. Add drained noodles, half the green onions, and sesame oil. Toss to coat, loosening with a splash of reserved noodle water if needed.

8. Serve hot topped with remaining green onions, sesame seeds, and lime wedges.

Notes

Protein swap: shrimp (cook 1–2 min per side), tofu croustillant, or turkey strips.

Veg boost: add snap peas or carrots; spinach can be folded in off heat.

Gluten-free: use GF tamari and rice noodles.
