  • 2 pounds carrots peeled and cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 1/3 cup pure maple syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • fresh parsley or thyme for garnish

  • Instructions

    1. Wash and peel carrots and cut into 2-inch pieces

    2. In a slow cooker combine carrots butter maple syrup brown sugar salt pepper and cinnamon if using and toss to coat

    3. Cover and cook on low for 5 hours or on high for 2 hours 30 minutes stirring halfway through

    4. Remove lid for the last 15 minutes if a thicker glaze is desired

    5. Transfer to a serving dish spoon any remaining glaze over carrots and garnish with parsley or thyme
