1. Dice the onion, peel and cube the sweet potatoes, slice the carrot, and mince the garlic and ginger.
2. Pat chicken thighs dry and season lightly with salt and pepper.
3. Layer sweet potatoes, onion, and carrot in the slow cooker, then place chicken on top and sprinkle garlic and ginger over the meat.
4. In a bowl, whisk coconut milk, tomato paste, curry powder, cumin, turmeric, and chicken broth until smooth.
5. Pour the sauce over the ingredients in the slow cooker, coating everything evenly.
6. Cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and sweet potatoes are soft.
7. Stir in baby spinach during the last 15 minutes to wilt.
8. Taste and adjust seasoning with salt, pepper, or a squeeze of lime juice.
9. Serve garnished with fresh cilantro and lime wedges alongside rice or preferred sides.
