Sweet Potato Chicken Curry – Cozy Crockpot Meal for Wholesome Dinners

Description

This slow cooker curry combines tender chicken, sweet potatoes, and warm spices in a creamy sauce for a wholesome and comforting dinner. It’s easy to prepare and perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs
  • 2 medium sweet potatoes peeled and cubed
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp curry powder
  • 1 can 13.5 oz coconut milk
  • 1 can 14 oz diced tomatoes
  • 2 cups baby spinach optional
  • salt to taste
  • pepper to taste

  • Instructions

    1. Cut chicken into bite-sized pieces and peel and cube sweet potatoes

    2. Chop onion and mince garlic and ginger

    3. Add chicken, sweet potatoes, onion, garlic, ginger, curry powder, salt, and pepper to the Crockpot

    4. Pour in coconut milk and diced tomatoes and gently stir to combine

    5. Cook on low for 6–7 hours or on high for 3–4 hours, stirring once halfway through

    6. About 15 minutes before serving stir in spinach if using and adjust seasoning

    7. Let the curry rest for 10 minutes before serving to thicken the sauce
