  • 4 chicken thighs or breasts, skin-on
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup fresh cranberries
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 garlic cloves, minced
  • salt to taste
  • black pepper to taste
  • 1/2 teaspoon lemon zest

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Peel and cube sweet potatoes into 1-inch pieces and place on a baking sheet.

    3. Rinse and dry cranberries, then set aside.

    4. Nestle chicken pieces among the sweet potatoes on the sheet.

    5. In a bowl, whisk together olive oil, maple syrup, minced garlic, half of the herbs, salt, pepper, and lemon zest.

    6. Drizzle the mixture evenly over the chicken and vegetables.

    7. Scatter fresh cranberries over the top of the pan.

    8. Roast for 30–35 minutes until chicken reaches 165°F and sweet potatoes are tender.

    9. Halfway through roasting, stir the vegetables gently and baste the chicken with pan juices.

    10. If desired, broil for 2–3 minutes to crisp the top.

    11. Garnish with remaining herbs and serve straight from the pan.
