A fusion of fiery Szechuan spice and sweetcorn sweetness elevates tender chicken thighs for a quick, flavorful weeknight meal that’s both nourishing and indulgent.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1 cup sweetcorn kernels fresh or frozen
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon grated ginger
  • 1 teaspoon chili flakes
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 2 green onions sliced
  • 1 teaspoon Szechuan peppercorns

  • Instructions

    1. Combine soy sauce garlic ginger chili flakes and cornstarch in a bowl and toss chicken thighs to coat then marinate for at least 20 minutes

    2. Whisk together soy sauce honey rice vinegar and sesame oil to make the glaze and set aside

    3. Heat vegetable oil in a wok over medium high heat and sear chicken thighs 3 to 4 minutes per side until golden brown

    4. Remove chicken and in the same pan sauté garlic ginger sweetcorn and Szechuan peppercorns until fragrant

    5. Return chicken to the pan pour in the glaze and stir for 3 to 5 minutes until sauce thickens and coats the chicken

    6. Garnish with sliced green onions and serve hot over steamed rice or noodles
