1. Place chicken breast between plastic wrap and pound to 1/2 inch thickness.
2. Combine salt, pepper, garlic powder, smoked paprika and mixed herbs in a small bowl.
3. Drizzle chicken with olive oil and lemon juice, then season evenly on both sides.
4. Heat skillet over medium heat and add a drizzle of oil.
5. Cook chicken undisturbed for 5-6 minutes until golden brown.
6. Flip and cook 4-5 minutes more until internal temperature reaches 165°F.
7. Remove from skillet and rest 3-5 minutes before slicing.
8. Serve with steamed vegetables, quinoa, brown rice or roasted potatoes.
