  • 1/2 cup chia seeds
  • 2 cups full-fat coconut milk
  • 12 tbsp maple syrup or honey
  • 1/2 tsp pure vanilla extract
  • 1 fresh mango, diced
  • 1/2 pineapple, diced
  • 1 kiwi, peeled and sliced
  • 2 tbsp shredded toasted coconut
  • 1 banana, sliced (optional)
  • 1 dragon fruit, sliced (optional)

  • Instructions

    1. In a bowl, whisk coconut milk, sweetener, and vanilla extract, then stir in chia seeds until evenly distributed.

    2. Cover and refrigerate the chia mixture for at least 4 hours or overnight until thickened.

    3. Meanwhile, prepare fruit by dicing mango and pineapple and slicing kiwi, banana, and dragon fruit; store separately.

    4. Once pudding is set, stir to loosen texture and spoon a layer into jars or glasses.

    5. Alternate layers of chia pudding and mixed fruit until containers are filled.

    6. Top parfaits with toasted coconut and mint leaves and chill for 15 minutes before serving, if desired.
