Ingredients

  • 1 pound ground turkey
  • 4 cups stuffing mix
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 cup chicken broth
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 teaspoons fresh herbs (sage, thyme, parsley)
  • salt and black pepper to taste

  • Instructions

    1. preheat oven to 375°F and grease a 12-cup muffin pan

    2. sauté onion and celery in butter until softened, about 5 to 7 minutes

    3. combine ground turkey, sautéed vegetables, herbs, salt, and pepper in a large bowl

    4. add stuffing mix, melted butter, eggs, and broth and stir until mixture is soft and slightly sticky

    5. scoop mixture into muffin cups, pressing gently to pack

    6. bake for 25 to 30 minutes until tops are golden brown

    7. cool muffins in pan for 5 minutes before removing
