3. Add remaining olive oil to the skillet and cook onion for 2 minutes until translucent, then add garlic and cook 30 seconds.
4. Add ground turkey, break it up, and cook 7–8 minutes until no pink remains, seasoning with paprika, cumin, salt, and pepper.
5. Return sweet potatoes and bell pepper to the skillet, stir to combine, and cook 5–7 minutes until edges crisp.
6. Stir in chopped spinach until wilted, adjust seasoning, and remove from heat.
