  • 1 tsp olive oil
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium taco seasoning
  • 1 tbsp tomato paste
  • 1/4 cup water or chicken broth
  • 810 large lettuce leaves (romaine, iceberg, or butter)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 medium avocado, diced
  • 1/4 cup shredded reduced-fat cheese
  • lime wedges, to taste
  • 2 tbsp chopped cilantro

  • Instructions

    1. Separate and rinse lettuce leaves then pat dry and chill

    2. Heat olive oil in a skillet over medium heat

    3. Add onion and sauté 2–3 minutes until soft

    4. Stir in garlic and cook until fragrant

    5. Add ground turkey and cook 6–8 minutes until browned

    6. Sprinkle in taco seasoning, tomato paste, and water or broth

    7. Simmer 2–3 minutes until mixture thickens

    8. Prepare toppings by dicing tomatoes and avocado, shredding cheese, and cutting lime wedges

    9. Lay a lettuce leaf flat, spoon 2–3 tablespoons of turkey mixture into the center

    10. Top with tomatoes, avocado, cilantro, cheese, and a squeeze of lime

    11. Fold or roll the lettuce wrap and serve immediately
