1. Preheat oven to 325°F (163°C) and line a 12-cup muffin tin with liners.
2. In a bowl, combine graham cracker crumbs, melted butter, and sugar until evenly moistened.
3. Press about 1 tablespoon of crust mixture into the bottom of each liner and bake for 5 minutes, then cool.
4. Beat cream cheese until smooth, add sugar and blend until combined.
5. Add eggs one at a time, mixing gently after each addition.
6. Stir in vanilla, sour cream, and lemon zest until batter is silky.
7. Divide filling among crusts, filling cups three-quarters full.
8. Bake 15–18 minutes until centers are set but still slightly jiggly.
9. Cool on a wire rack for 1 hour, then refrigerate at least 2 hours.
10. Top with strawberry puree, chocolate ganache, or whipped cream before serving.
