1. Preheat oven to 325°F and line a 12-cup muffin tin with paper liners or set out clear dessert cups.
2. In a bowl, mix crushed graham crackers, 2 tablespoons sugar, and melted butter until crumbs are evenly coated.
3. Divide crust mixture among cups, pressing firmly to form a base.
4. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth.
5. Add eggs one at a time, mixing on low, then stir in vanilla, sour cream, and lemon juice.
6. Fill each crust three-quarters full with cheesecake mixture.
7. Bake for 15–18 minutes until centers are set, then cool on a rack.
8. Chill cheesecakes in the refrigerator for at least 2 hours until firm.
