Description

These vegan peppermint brownies combine rich chocolate flavor with a refreshing hint of mint for a festive holiday treat. Easy to make from scratch or using a vegan-friendly brownie mix, they deliver fudgy centers and chewy edges in every bite.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup organic sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp flaxseed meal mixed with 6 tbsp water
  • 1/2 cup melted vegan butter
  • 1/3 cup non-dairy milk
  • 1 tsp vanilla extract
  • 3/4 to 1 tsp peppermint extract
  • 1/2 cup vegan chocolate chips
  • 2 tbsp crushed candy canes (optional)

  • Instructions

    1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.

    2. Whisk flour, cocoa powder, baking powder and salt in a bowl.

    3. Combine flaxseed meal with water; let thicken 5 minutes, then stir in melted butter, non-dairy milk, sugar, vanilla and peppermint extracts.

    4. Fold wet ingredients into dry until just combined, then stir in chocolate chips.

    5. Pour batter into pan and bake 28–32 minutes until edges are set and a toothpick comes out with moist crumbs.

    6. Cool in pan 20 minutes, then lift out and slice.

    7. Optional: top with vegan peppermint frosting or sprinkle crushed candy canes.
