Description

A hearty slow cooker chicken and vegetable dish that combines tender chicken breasts with carrots, potatoes, and aromatic herbs for a comforting family dinner. Simply prep in the morning and let the crockpot work its magic for an effortless meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium carrots, peeled and chopped
  • 3 potatoes, cubed
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • salt and pepper to taste
  • 1 tbsp olive oil
  • ½ cup frozen peas (optional)

  • Instructions

    1. Lightly coat the crockpot with olive oil or non-stick spray.

    2. Layer potatoes, carrots, and onions at the bottom of the pot.

    3. Season chicken breasts with salt, pepper, thyme, and rosemary and place over vegetables.

    4. Add garlic and pour chicken broth over everything.

    5. Cover and cook on low for 6 hours or on high for 3 hours.

    6. In the last 30 minutes of cooking, stir in peas if desired.
