1. preheat oven to 375°F and grease a 9×13-inch baking dish
2. heat olive oil in a large skillet over medium heat and sauté onion until translucent
3. add riced cauliflower, garlic powder, salt, and pepper and cook until tender, about 5 minutes
4. in a bowl, combine cream cheese and half of the cheddar until smooth, then fold in shredded chicken
5. stir the cooked cauliflower mixture into the chicken and cheese blend until evenly combined
6. transfer mixture to the prepared baking dish and spread into an even layer
7. sprinkle remaining cheddar cheese and paprika over the top
8. bake uncovered for 20–25 minutes until cheese is melted and golden
9. let casserole rest for 5 minutes before serving
