1. Wash, peel, and chop all vegetables evenly for balanced cooking.
2. Heat olive oil in a skillet over medium heat and sauté onion and garlic until fragrant, about 3–4 minutes.
3. Layer carrots, celery, and potatoes in the crockpot, then add zucchini, sautéed onion and garlic, diced tomatoes, and kale.
4. Sprinkle thyme, bay leaf, salt, and pepper over the vegetables.
5. Pour vegetable broth into the crockpot to cover ingredients and stir gently.
6. Cover and cook on low for 7 hours until vegetables are tender and flavors meld.
7. Remove the bay leaf, stir in parsley and lemon juice, and adjust seasoning before serving.
